Vanilla Melon Margarita is the smooth, intoxicatingly fragrant drink of summer you absolutely cannot live without…would I joke about this?? No I would not!! What are you still doing here? Go make it immediately, thank me later…
Ingredients
Vanilla Melon Puree
Makes about 1 cup
1/2 a medium sweet and juicy melon, peeled, seeded and cubed
2 inches fresh ginger, peeled and sliced in half
1 vanilla pod, split
1/4 cup sugar
Juice of 3 limes
Makes 1 Drink:
2 ounces blanco tequila
1 ounce elderflower liqueur (St. Germain)
1 ounce fresh lime juice
4 ounces melon puree
Tajin and sea salt for rim
Instructions
•Bring melon, ginger, vanilla pod and sugar to a simmer over medium-low heat and allow to cook, stirring occasionally to prevent burning, until melon is mostly broken down and juices have been released and reduced by half, 10-15 minutes. Remove to an ice bath and cool to room temperature. This can be made ahead and stored in the refrigerator up to 3 days to flavor lemonade, iced tea, or beautiful cocktails like this!
•When ready to assemble, fill a shaker with ice and pour over the tequila, elderflower liqueur, lime juice and melon puree and shake well until the shaker is frosty. Prepare serving class rimmed with a mixture of tajin and salt and filled with fresh ice. Pour cocktail over top and garnish with a fresh melon wedge, then enjoy immediately. The drink can also be blended with ice for a frozen version! Saying it now: Drink of Summer!!!
