Radicchio, Apple and Manchego Salad with Lemon Vinaigrette

This simple salad is deliciously crisp, flecked with salty, rich Manchego cheese, and glossed with a saucy chopped lemon vinaigrette.

Radicchio, Apple and Manchego Salad with Lemon Vinaigrette

Serving Size: 4 people

Ingredients:

2 heads radicchio, halved and cores removed

1 Honeycrisp apple, cored and thinly sliced or cubed

4 oz Manchego cheese, grated

2 oz Manchego cheese, grated and divided in half

Optional additions: candied walnuts, minced chiles, fresh mint or parsley, shaved red onion, chickpeas, capers, crushed pistachios

Vinaigrette:

½ cup olive oil

1 lemon, one half juiced and one half roughly chopped

¼ cup balsamic or white wine vinegar

1 garlic clove, minced

1 teaspoon honey

Sea salt and freshly cracked pepper to taste

Instructions:

•Place ice and water in a large bowl to create an ice bath. Cut the radicchio into quarter wedges and add separated leaves to ice bath for 10-15 minutes to crisp. Spin radicchio in a salad spinner until dry and reserve.

•Whisk vinaigrette ingredients plus half the Manchego cheese together in the bottom of a salad bowl, then add in radicchio, apple and toss to combine. Top with the remaining Manchego cheese.

•Season with additional salt and pepper as needed and enjoy!
