Valentine’s Day Fondue

It’s almost Valentine’s Day, and I think we should spice things up with a pot full of melting, gooey cheese into which we will dunk fine hunks of fresh baguette — or crunchy veg, or lovely dried figs — don’t you??

Come along to make a (mostly) traditional gruyere fondue, flavor boosted with wine, shallot, garlic, mustard, and a squeeze of lemon… because this is sophisticated, adult melted cheese ready for your love day celebrating, whether for a party of 1, 2, or 12. No special equipment needed! Xx

Valentine’s Day Fondue

Prep time: 10 minutes Cook time: 10 minutes Serves: 8 to 10  Ingredients 2 tablespoons unsalted butter 1 small shallot, minced 1 clove garlic, creamed 1 cup dry white wine 3/4-pound gruyere cheese, grated 3/4-pound Swiss Emmenthaler cheese, grated 1 tablespoon plus ¼ teaspoon cornstarch Juice of ½ lemon 1 teaspoon Dijon mustard Kosher salt, to taste Dippers: Toasted Crusty Bread Steak bites Cornichon Radishes Tart apple slices Carrots Bell pepper slices Dried figs Rainbow carrot slices  Instructions •In a heated fondue pot or heavy bottomed medium saucepan add the olive oil. Add the shallot and saute for a couple of minutes until softened and aromatic. If using a saucepan or dutch oven, do this all over medium-low heat. Add the garlic and white wine and bring to a low simmer.  •Meanwhile, in a medium bowl toss the shredded cheese with the cornstarch. Begin adding the cheese to the warm wine, stirring continuously, until nicely melted. Season with salt to taste and add lemon juice and Dijon mustard. Stir until smooth.  •Serve next to a board with favorite dippers.
