Chicken Skewers with Red Onion and Bell Pepper

The perfect juicy but light addition to any bbq spread, and an easy way to break into grilling if it’s something that intimidates you! Chicken breast bathed in olive oil, garlic, fresh parsley and spices, threaded with sweet red onion and bell pepper, all perfectly charred and smoky from the hot grill… we end up making these once a week all summer long and leftovers go with everything — enjoy!

Smokey Grilled Chicken & Corn “Tabbouleh”

Nothing says summer like grilled chicken and sun sweet corn! This bird stays extra juicy bathed in a garlicky yogurt marinade with citrus and herbs for tangy, bright flavor that pairs beautifully with smokey charred corn off the grill!

Yes, I am aware this takes a VERY imaginative read of traditional tabbouleh, but for me tabbouleh is all about the extravagance of parsley and mint, and when you marry this together with chilis, lemon juice, and olive oil adorning your corn and brilliantly complementing your chicken, it becomes a meal I could eat everyday for the rest of August and be positively thrilled. Grilled Halloumi

Throwing one out for my vegetarians who love to grill!! This is a hearty, veg-forward meal featuring #halloumi, an insanely delicious cheese (usually made from goat and/or sheep’s milk and traditional to Cyprus!) that cooks to a gloriously golden, crisp on the grill or in a pan, belying its soft, warm interior with that classic squeaky chew!

And that’s only the beginning… we’ve got melting, molten grilled stone fruit, filling lentils bathed in a nicely spicy chili, mint and scallion vinaigrette. It’s enough to make any mouth smile…enjoy!!

Grilled Squash With Cherry Salsa

It’s really happening, friends! I’m officially wearing an apron because it’s time to pit some CHERRIES — and even I have my kitchen daredevil limits lol.

We’ll use these juicy little bombs of sweetness to create an intensely flavorful fresh salsa with shallots, cilantro, Serrano chilies, and lime — the perfect topping for beautifully charred seasonal veg (we’re using up my yellow squash today!) or honestly just about anything coming off your grill this summer.

I admit I ate the leftovers by the spoonful like soup and was very happy about it!

Grilled Chicken Kebabs With Fresh Herb Salad

Try these ultra juicy, grilled chicken kebabs – the perfect smoky, richly flavorful meat-on-a-stick to pack for quick picnic lunches or pair with a crisp and hydrating romaine salad for a sumptuously filling lunch or dinner spread.

I use a combination of spices inspired by traditional Shawarma – cumin, coriander, cinnamon, garlic — plus lemon, paprika, and a handful of fresh herbs to make sure every bite is beyond. I could happily eat this combo every day for the rest of summer, it’s that good!

Cajun Salmon Burgers

I spent a college summer in London where I discovered the comforting joy that is excellent fish cakes!  These salmon burgers are inspired by the many I tried that summer — though I took some liberties  — and sing with a healthy dose of fresh herbs, scallions, and cajun-style seasoning.

They cook up fast and full of flavor and are the perfect bbq staple or protein-packed topper to Frisée salad with Lemon Anchovy Vinaigrette. I highly recommend giving your salmon burger a seductive swish of Caper Aioli — homemade mayo bedazzled with garlic, capers, and lemons! Or put all three together and my oh my, brunch, lunch, or dinner is served!

Whole Grilled Branzino

Presenting one of the lightest, easiest, most flavorful, and most magnificent ways to cook fish — and my absolute favorite: Whole Grilled Branzino!

Mediterranean sea bass (branzino) is a flaky, white fish that is meaty and mild, and I love how crispy and salty the skin gets on the grill — stuffing with garlic, fresh herbs, red onion, and lemon keeps everything extra juicy! Stick around to the end of the video to see how easy it is to de-bone, but we usually just serve them whole for an utterly mermaid-ready experience — especially if you light a bonfire and grill beachside!

Suggested pairing: tender lettuce salad, roasted potatoes, or crusty baguette with a little olive oil and salt, and a cold beer or verdicchio, soaking up the final days of summer fun!

Turkish Kofte Burgers

This is one of my all-time favorite meals that takes me right back to visiting my family in Turkey. On hot afternoons, we’ll turn on the grill and turn out dozens of these juicy, tender, perfectly charred and gently spiced köfte burgers, paired with a giant bowl of fresh, herby, crisp Greek salad. An easy and delicious way to feed a crowd (or party of 1!), this meal is the perfect balance of something filling and flavorful, but still light enough to eat while soaking up the summer sun. Add your icy cold beverage of choice and enjoy a little slice of Mediterranean heaven.
