This is one of my favorite unconventional beauty-boosting recipes — easy, delicious, protein-, fiber-, and superfood-packed gluten free pancakes!
Servings: 12 Silver Dollar Pancakes
Ingredients:
1 cup gluten free (GF) rolled oats, pulverized
¼ cup flax seeds, pulverized
½ cup favorite GF protein powder or superfood powder
½ teaspoon tsp baking powder
¼ tsp kosher salt
2 ripe bananas, mashed
2 eggs
1 tsp coconut or grapeseed oil (optional), plus more for pan
1 tsp vanilla
1 ½ cups almond milk or alternative
Maple or date syrup to serve
Instructions:
•Pulverize the oats and flax seeds to a fine powder in the blender and empty into a bowl.
•Whisk together with protein powder, baking powder, salt and set aside.
•In another bowl, mash bananas and whisk together with eggs, oil (if using), and vanilla extract.
•Combine wet with dry and whisk in almond milk until preferred consistency is reached — start with a cup and add up to a cup and a half.
•Let batter sit 5 minutes while you get a nonstick pan hot over medium high heat with a little bit of oil in it.
•Ladle 1/4 cup of batter onto the surface. When many air bubbles rise to the top of each pancake and burst, flip and finish cooking on the other side, about 3-4 minutes per side.
•Serve with maple or date syrup if desired, though they are sweet enough to eat on their own!
