Chermoula Roasted Eggplant

I grew up mostly vegetarian, so I have always felt veggies deserved star placement on the table — but this one really shines!

Chermoula is a delicious, herby North African sauce that I’ve adapted to the ingredients I had in my kitchen (lemon, parsley, garlic, cumin, and paprika, oh my!) that I slather on eggplant as it roasts, yielding a richly flavorful, creamy flesh that creates the ideal base for nutty farro (or brown rice!), a scattering of fresh herbs, and sweet-tart pomegranate seeds for a burst of sweetness. I dollop lemony yogurt overtop just to keep it all extra luscious.

Hearty, filling, stick to your ribs — and totally meatless!! Enjoy!

Brie & Prosciutto Kisses

Celebrate a cozy little Valentine’s Day with these Brie & Prosciutto Kisses!

Creamy brie cheese & sweet jam are tucked inside buttery puff pastry, then baked to perfection so the cheese is warm and melting, and the pastry is golden brown and airy. To kick it up a notch, I twirled salty strips of prosciutto into rosebuds — they’re easy enough for even non-crafters like myself to make! — and baked to crispy perfection.

Fun and just a little fancy for a pre-date appetizer, a Galentine’s with the girls, or a celebratory party of one! This little nibble pairs perfectly with one of my favorite cocktails, the Bubbly Greyhound — fresh grapefruit juice and Prosecco brought to life with Plume & Petal Lemon Drift vodka infused with natural flavors like elderflower and white tea, then sweetened naturally with just a hint of honey.

I love being able to have a bespoke, luxurious cocktail at home — no bartender required!

Chili-Stuffed Butternut Squash

Every January, I crave savory, comforting foods that nourish my body and help me get back on track after the holidays. This Chili Stuffed Butternut Squash is so flavorful and filling.

And since this dish is a veggie stuffed with lots of veggies—and juicy ground turkey flavored with chipotle and other warming spices!—it’s fixing to be your favorite new weeknight staple. The butternut squash gets so tender and sweet as it roasts, the perfect complement to the gentle heat of the filling — I love to top mine with a little fresh parsley and rich, cooling avocado to round out every bite for pure, clean eating joy!

Grandaddy’s Stuffed Artichokes

Each Christmas, my grandfather cooks up huge batches of these delectable vegetables for the whole family, and they always, ALWAYS steal the show!

These giant green jewels are jam packed with flavor — Italian breadcrumbs! Pecorino cheese! Garlic! Olive oil! And his one special secret addition to keep the whole thing extra flavorful. The breadcrumbs get soaked with broth (stick with veg if you want a meat-free option, or choose chicken for a richer flavor) and olive oil before roasting away to a crisp, golden brown top and melting, cheesy garlicky breadcrumbs coating every tender artichoke leaf.

They make for a gorgeous vegetarian main or starter option to share for your holiday table!

Chestnut Sourdough Stuffing

For stuffing, my must-have ingredient is chestnuts to add tender texture and a sweet, roasted moment in otherwise classic, buttery, crispy-edged sourdough stuffing.

Nothing says Thanksgiving like multitasking cooking, am I right? Our Thanksgiving menu is complete, and now we just need to finish it off and pile our plates with juicy, crispy-skinned, Maple Butter Spatchcocked Turkey, nutty yet savory Chestnut Sourdough Stuffing, and then top everything off with a lacquer of velvety Roasted Turkey Gravy.

Hopefully you’re feeling confident and ready to take on the Super Bowl of cooking as the kitchen star you are. I can’t wait to see what you create!

Happy Thanksgiving — now go enjoy!

Hold the phone… are we talking about sweet and savory leeks and plenty of vibrant spinach? Bathed in the most luxuriously creamy sauce scented with cognac, baked to rich casserole perfection, and topped with crisp, salty fried shallots?!!! We are?? WE ARE!! The very best part is everything can be made a day (or even two) ahead, so it’s the perfect, easy addition to your confidence-boosting Thanksgiving feast! Whole Roasted Cauliflower

Lucious, golden brown, crispy on the outside, and so melting and tender on the inside – cauliflower is the vegetable that eats like a steak! I LOVE roasting a whole head because the presentation is seriously impressive, plus slicing off casual hunks smothered in yummy chile herb tahini sauce is just so hedonistic.

Chocolate Raspberry Quinoa Balls

These quick and easy energy bites combine tart-sweet raspberries and chocolatey almond butter for a satisfyingly not-too-sweet snack. It’s a great way to use up any leftover quinoa which adds great texture and filling, complete protein. Kids love them, too!
