Key Lime Daiquiri
Usher in spring with a fresh Key Lime Daiquiri! I love the incredibly floral and brightly tart juice of tiny key limes, but this drink is excellent with regular limes, too. So much more than the sum of its parts, it makes for an incredibly refined sip — especially in a matching green coupe glass!

Key Lime Daiquiri
Serves: 1
INGREDIENTS
2 oz white rum
1 oz key lime simple syrup (recipe below)
1 oz freshly squeezed key lime juice
Key Lime Simple Syrup (makes about 1 cup):
1/2 cup fresh key lime (or lime) juice
Zest of two limes
1 cup granulated sugar
INSTRUCTIONS
Add all ingredients to a cocktail shaker halfway filled with ice, cap, and shake vigorously to begin breaking the ice into shards and thoroughly chill your cocktail, 1-2 minutes. The outside of the shaker should be clouded with frost. Strain into a coupe glass for an exceptionally refined sip.
Key Lime Simple Syrup:
Add lime juice, lime zest, 1/2 cup water, and granulated sugar to a small pot and set over medium-high heat uncovered. Bring up to a simmer and stir to dissolve all sugar, allow to simmer 1 minute, then remove from heat and allow to cool completely.
Pour through a fine mesh strainer to remove any solids and store in an airtight container up to two weeks. Add to sparkling water or ginger beer, or into a variety of cocktails for a zesty burst of lime with a touch of sweetness!
