Vanilla Melon Margarita

INGREDIENTS

Vanilla Melon Puree (makes about 1 cup):
1/2 a medium sweet and juicy melon, peeled, seeded and cubed
2 inches fresh ginger, peeled and sliced in half
1 vanilla pod, split
1/4 cup sugar
Juice of 3 limes

Makes 1 Drink:
2 ounces blanco tequila
1 ounce elderflower liqueur (St. Germain)
1 ounce fresh lime juice
4 ounces melon puree
Tajin and sea salt for rim

INSTRUCTIONS

Bring melon, ginger, vanilla pod and sugar to a simmer over medium-low heat and allow to cook, stirring occasionally to prevent burning, until melon is mostly broken down and juices have been released and reduced by half, 10-15 minutes. Remove to an ice bath and cool to room temperature. This can be made ahead and stored in the refrigerator up to 3 days to flavor lemonade, iced tea, or beautiful cocktails!

When ready to assemble, fill a shaker with ice and pour over the tequila, elderflower liqueur, lime juice and melon puree and shake well until the shaker is frosty. Prepare serving glass rimmed with Tajin and sea salt. Pour over a large ice cube, garnish and enjoy. Drink of Summer!!!
