Leek and Chestnut Stuffing

Diving into this dish always makes me wonder two things: 1) why don’t we eat stuffing more often, 2) what if we caramelized leeks, onions, and garlic in two sticks of butter and served with a pile of gently toasted sourdough bread on the side and called it “Deconstructed Stuffing”? It’s a thought!

This is our family’s quintessential and most favorite elegantly simple and simply elegant holiday stuffing recipe, redolent with a mountain of leeks, onions, garlic, plenty of sage and thyme, and a nice fistful of chopped roasted and peeled chestnuts to keep every bite meaty with a tender little nub of something sweet to balance all the savory wonder. I bake it over two casserole dishes for maximum crispy top crust with plenty of deliciously softened bits soaked through with butter and broth underneath.

A gorgeously marbled NY strip steak, crusted with crushed peppercorns, and bathed in a luscious, brandied cream sauce paired with… potatoes that are glossed with olive oil, fresh thyme, and a generous shower of chopped garlic, then oven roasted until they turn a deep dark golden brown with a soft, fluffy interior — perfect for soaking up any leftover au poivre sauce!

Herbed Crown Roast of Pork

Let’s just say I’m a fan of the maximalist approach when it comes to gorgeous holiday pork preparations (most things, honestly), and this rack of pork CROWN ROAST is a prime example.

I will always look for ways to create recipes that cause your guests to audibly gasp in awe and amazement but also require the least amount of effort on your part: in this case, asking your butcher to build the crown roast for you by stitching together two rib racks, slathering it with an insanely flavorful concoction of all my favorite pork pals — horseradish, apricot jam, dijon mustard, crushed coriander, garlic, thyme, sage!!! — and then letting it roast to spectacular levels of juiciness while you make a pearled couscous with apple, raw and roasted fennel, and a sweet and tangy vinaigrette.

With your main and side complete at the same time, you, my friend, are free to get back to the important work of celebrating the season and accepting all the compliments.

Curried Roasted Pumpkin Soup

I love a hearty veggie soup as a warming starter or simple meal — even better when it’s @WW friendly like this one! The flavors of roasted pumpkin and curry are so nicely balanced by lime and coconut milk, and the fiery crunch of spicy roasted pumpkin seeds on top make it a soup with a bit of bite!

Feel free to skip the pumpkin seeds and garnish simply with a scattering of fresh herbs to beautifully balance this rich, earthy soup. The flavors meld and are even better the next day, so make a big batch for easy meals throughout the week!
